Fact about Peru
Ceviche - the National Dish
It came about through Japanese migration into Peru, but is far removed from its sushi origins. Usually consists of flakes of firm white fish marinated in lime juice, with plenty of chopped red onion. It is served with boiled sweet potatoes, and a chunk of maize.
